We bought it in January of 2012, knowing there would be a lot of work to do, but also a wide open opportunity.
We have about forty acres devoted to collecting wild sap from the sugar maple trees on our beautiful, sloping woods, and another forty devoted to cattle. Our healthy, hardy herd of Scottish Highlanders have grazed over this same sweep of pastures and woods for over twenty years. We produce pure, single-source maple syrup, and grass-fed, peaceful, drug-free, delicious beef.
We may not have all our certifications right away, but we take our stewardship seriously. All of our practices are organic, and aspire to the even more rigorous biodynamic and permaculture ideals.
The orchard will be bearing in about five years, along with honey bees. We'll keep you posted.
